Savory Sweet Potato Pancakes

It’s a word you could probably use to describe me when it comes to pancakes. As I’ve mentioned before, I eat them almost every morning and I’m not ashamed of it.

Yesterday, I woke up and saw that we forgot to run the dishwasher. Not thinking, I popped in a detergent tablet and hit start before realizing my griddle pan and both Ninja cups, as well as the blade where in there. That meant no pancakes for breakfast and I almost cried.

I carried on with my coffee and a bowl of banana oatmeal topped with strawberries but it just wasn’t the same.

When lunchtime rolled around, I was still thinking about pancakes (it really is an obsession) but I also wanted something savory. I look in the fridge at what my option where and decided to experiment.

With 3 simple ingredients and my pancake making tools, these 21 Day Fix friendly, Savory Sweet Potato Pancakes were born!

INGREDIENTS
  • ½ cup mashed sweet potato (the flesh from 1 medium-small cooked sweet potato)
  • 2 eggs
  • nonstick spray for cooking
  • Optional Seasonings
  • ¾ teaspoon ground cinnamon
  • pinch of ground ginger
  • pinch of allspice
  • pinch of salt
  • I used cajun seasoning in mine to keep them savory instead of sweet

DIRECTIONS:

  • Blend or whisk together your eggs, sweet potato and spices (I used my Ninja smoothie cup to quickly blend it and make a nice smooth batter).
  • Pour 1/4 cup servings onto a hot griddle and cook for 3-5 minutes per side.

These yielded a much thicker batter than what I am used to, so I had to spoon them into the pan. I probably could have thinned it out a little with some water, but the texture of the final product was spot on.

For those of you doing 21 Day Fix these count as 1 Yellow, 1 Red and if you top it like a veggie like I did, 1 Green.

After digging through my spices, I opted to use some Cajun seasoning in my batter. I then topped them with 1 cup of baby spinach, which I wilted on the griddle as the pancakes were cooking and a drizzle of Sriracha.

I plan on trying these with cinnamon and maple this week, as well as some other variations over the next few weeks. I’ll report back with what works.

Body Beast Banana Pancakes

Hi my name is Nikki and I am addicted to pancakes!

I have been eating pancakes almost every morning since I started Body Beast back in July and I am not tired of them yet.

There is just something comforting about them to me. They are like a nice warm hug for my soul and who wouldn’t like a nice warm hug to start their morning off, right?

Coffee + Pancakes = Perfection (to me)

Below, is one of my go-to recipes for pancakes, Body Beast Banana Pancakes, which is from the Body Beast “Book of Beast” nutrition guide. I don’t use this exact recipe everyday, but I do make these often. I also make a few variations to them since I have gluten sensitivities. I make sure I buy gluten-free oats and if I don’t have gluten-free flour on hand, I just blend up a cup of oats, until they’re a fine flour-like consistency and I always make sure my baking powder is gluten-free too.

Body Beast Beast Banana Pancakes

This recipe also works AWESOME for meal prepping! I make multiple batches and keep them in the fridge, but you could store them in the freezer too (They just don’t last that long in our house).

Another go-to pancake recipe for me, are the Healthy Pancakes I started making while I was doing the 21 Day Fix. These are super quick and easy to make, plus they make a double batch so you’ll have breakfast for two days, while only cleaning up mixing bowls and pans once! Since I’m doing Body Beast now, I  add a scoop of protein powder to them as well.

Pancakes are really just a blank slate to me, which is probably why I haven’t become bored with them. They can be topped with syrup, fresh fruit, preserves, nut butters, and so much more! You can make a huge batch of them but still enjoy a different flavor profile everyday, which I think is what draws me to them so much. Currently, my favorite way to enjoy them is with some real maple syrup (make sure your syrup is real, people…no maple “flavored” high fructose corn syrup, okay?!) and a sprinkle of unsweetened, shredded coconut. Another favorite of mine is topping them with some peanut butter, sliced banana and a drizzle of raw, local honey.

Pancakes! Pancakes! Pancakes!

Today is National Pancake Day!

Normally I would love to toss the kiddies into my truck and head over to iHop for some pancake delishiousness, but that’s just not happening. Instead, we have decided to make some for dinner tonight, right here in the comfort of our home.

The boy has requested traditional pancakes, the girl will most likely want chocolate chip and I’m going to have a banana protein version.

Of course I had to hop on Pinterest to see what they had for inspiration and as usual, they didn’t let me down. I found a paleo version of the pancakes while just browsing thru what the people I follow pinned. (Thanks Jackie!)

So here is the I found and what I’ll be using in the kitchen tonight:

I’ll be using this recipe to create all three variations I mentioned above (unless the picky boy sees me, then he’ll be having Bisquick pancakes….don’t judge!) I think I’ll add some cinnamon and a scoop of vanilla protein powder to my banana pancakes….think a healthy version of banana bread!
