{Recipe} Chicken “Bruschetta”

It’s been a while since I’ve tried a new recipe, so I hit the web in search of inspiration for the boneless, skinless chicken breasts I bought on-sale the other day.

Not seeing a particular recipe I liked, I decided to take a little of this and a little of that, from the ones that did catch my eye. The result was pretty tasty so I decided to share it.

Chicken “Bruschetta” served over whole-wheat pasta

Chicken “Bruschetta”

Ingredients:

8 ounce bag of spinach
3 Tb chicken stock
4 boneless, skinless chicken breasts
salt and pepper, to taste
chopped garlic (use as much or as little as you like)
onion powder
Italian seasoning
2 large tomatos, coursely chopped
1 small onion. chopped
1/4 cup Roasted Peppers (I used frozen ones from Trader Joes)
1/3 C fresh parmesan cheese, grated

Directions:

1.  Heat oven to 350 degrees.  Place the spinach in the bottom of a 9 x 13 glass baking pan.  Drizzle with the chicken stock, then sprinkle with salt and pepper.  Arrange the chicken on top of the spinach and season well with the salt, pepper, garlic, onion powder and Italian seasoning.  Add the chopped tomato and roasted peppers, then top with the parmesan cheese

2.  Loosely tent the pan with a piece of aluminum foil.  Bake for 15-20 minutes, remove the foil and continue to bake for another 20 minutes, or until the chicken is cooked through.  Serve immediately.

I made some thin, whole-wheat spaghetti to serve with this and it was very yummy. I liked the ease of this dish and how you can easily change the ingredients to fit your taste-buds.

Fitspiration… Stop It! I Beg You!

Lately, I have become increasingly agitated by “fitness inspiration” or “fitspiration” photos people have been Pinning, Instagraming and Facebooking. They usually feature a stick thin woman or a woman who clearly trains for competition, with a motivational quote. I love most of the quotes on them, however both of these image types are not realistic goals. These photos might be a dream of yours, but most times, they are not a reality and will only set you up to fail and feel miserable about your body, despite whatever progress you may make. (Trust me…I have gone through this.)

Unsure of what I’m referring to? Here are a few examples:

These ladies have amazing bodies, but it’s not the norm.

Now, before you jump all over me and tell me that they are attainable with hard work, I am well aware of that. ANYTHING is possible, and I’m not knocking that. I’m simply speaking of the average overweight mom or woman who is obsessing over losing weight.

A typical woman works a desk job, has evening activities to attend with her children, a house to clean, laundry to do and is forced to grab fast food from time to time. That doesn’t mean that there is no time to workout….you make the time for that….however, the type of strict diet and workout routine needed to achieve the super fit, sculpted bodies in some of these photos is very hard to follow.

Using photos like these as motivation also makes it hard to appreciate the progress that you do make during your weight loss, because you’re always comparing yourself to something that isn’t the norm.

Do you know how many times I have had people message me saying they don’t understand why they are following a program and only losing a pound? They are genuinely upset by losing a pound when they should  be happy they are making progress, being active, eating healthier and not gaining. As a generation, it’s all about instant gratification and this is not the place for it.

This leads me to another pet peeve of mine, which I have seen all over Facebook since the new year.  Obscene diets and “miracle” pills. I’ve said it a million times, so what’s one more?

THEY DON’T WORK!

Just stop it! You didn’t gain the weight over night, therefore you shouldn’t expect to lose it overnight. There is no quick fix. There is no magic pill. Do you really think the super fit girl in the commercial simply popped a pill and woke up with those six pack abs and super perky ass? NO! She worked her ass off for it in the gym and ate super clean. If it was as simple as popping a pill, we wouldn’t have an obesity problem in this country.

Please….just stop with the fad diets, popping pills that claim to block fat and help you get fit and lean without exercise. I beg you! They are unhealthy and if you do have any success, you will just end up gaining it all back, plus some when you stop following the diet or taking the pills, not to mention the damage you can be doing to your body by following these plans.

The road to getting healthy is not an easy one, but it can be a rewarding one. I’ve been at this for over three years and I’ve battled a lot of demons (thanks in part to photos like the ones above), but I’ve learned so much. How to eat healthy, that it’s okay to have a cheat day, that my body is much stronger than my mind and when my mind shuts the fuck up…my body is capable of amazing things! The most important lesson is one I’m currently working on, and that’s to love myself. I’m learning to accept the flaws of my body, because they add character.

Yes, I had a tummy tuck and some people might view that as shallow, and that’s okay, because it doesn’t matter what they think. It’s what I needed to do in order to move on with my life and to finally say goodbye to the fat girl I spent so many years of my life being.

In closing, I ask you to simply to keep realistic goals when you start trying to lose weight. Take it slow, keep it real and know that’s okay to be human and make mistakes. It takes time to break bad habits and form new, good ones. Most importantly, take the time to appreciate all of the things you achieve!

A Smooth-ie New {Guest Post}

This week I have a great guest post courtesy of Jac, from Nora & Jac! If you follow me on Twitter you may be familiar with her name from The Plank Challenge.

We have only met in person once (and it wasn’t under the best of circumstances) but I consider her a good friend and I’m glad that I met her on that crazy place called Twitter.

I enjoy that we motivate each other and that she is just as willing to try new healthy recipes as I am! Hey y’all, I’m Jac of Nora & Jac – Nikki and I met through a mutual friend of ours and have became great pals since! This girl motivates me like no one else to get healthy and get my bum to the gym. {which I have failed to do lately.} I love having someone who is states away but can still send me a tweet saying get off your ass and get moving and I kinda feel like I have to listen to her. So thanks for that, lady!

And while I’m getting back on the healthy track I’ve discovered my love for “Green Smoothies”. My first thought on them were that they would be gross, taste like grass, or be one of those things I just drank because it’s healthy. Spinach in a smoothie just seemed bizarre to me. But, eventually I thought I’d give it a try…. and boy was I wrong! DELICIOUS!

Before this discovery I tended to stray away from smoothies, not because I didn’t like them {I LOVE them} but because they always made me feel kinda icky and bloated afterwards. However, I was also buying those pre-made smoothie packs – that could have had something to do with it. But now, after using all fresh ingredients and a huge handful of spinach I feel good after drinking them and stay full until lunch.

Ingredients: 

{bare with me here – I don’t actually measure anything. Unless using my hands count? ;)}

A handful of spinach leaves
1 cup of greek yogurt {any flavor – I used Stawberry here}
6 large blackberries
1/2 c blueberries
1/2 banana
3 strawberries, sliced
1/4-1/2 c skim milk
a dash of cinnamon
I always freeze my banana the night before. This time I also froze my strawberries and the greek yogurt. I spooned the yogurt into an ice cube tray {about 6 ice cubes worth}.
Put the spinach in the blender first, then the yogurt, then just layer the fruits and pour the milk and cinnamon over it. You kinda have to eyeball the milk amount… I just add milk until it’s blending properly. I loved this berry/spinach smoothie.
There are so many variations you can do. This morning my smoothie was spinach, pineapple, peach, banana, greek yogurt, and I used coconut water as my liquid. Yum in my tum!
So… the lesson here being… if you were apprehensive about spinach smoothies… TRY THEM! You won’t regret it! And if you are an avid spinach smoothie drinker… what do you put in yours???

Pancakes! Pancakes! Pancakes!

Today is National Pancake Day!

Normally I would love to toss the kiddies into my truck and head over to iHop for some pancake delishiousness, but that’s just not happening. Instead, we have decided to make some for dinner tonight, right here in the comfort of our home.

The boy has requested traditional pancakes, the girl will most likely want chocolate chip and I’m going to have a banana protein version.

Of course I had to hop on Pinterest to see what they had for inspiration and as usual, they didn’t let me down. I found a paleo version of the pancakes while just browsing thru what the people I follow pinned. (Thanks Jackie!)

So here is the I found and what I’ll be using in the kitchen tonight:

This stack of fluffy goodness is made from 4 simple ingredients that you probably already have on hand!

I’ll be using this recipe to create all three variations I mentioned above (unless the picky boy sees me, then he’ll be having Bisquick pancakes….don’t judge!) I think I’ll add some cinnamon and a scoop of vanilla protein powder to my banana pancakes….think a healthy version of banana bread!

Slow Going, But Still Moving

icy roadsWell, after cranking out 27+ miles in one week, I managed only 6 miles last week. Sigh…

I know, 6 miles isn’t awful and it’s only 4 miles off from the minimum of 10 miles per week that I set for myself. Little setbacks just tend to aggravate me, and so does having my routine thrown off!

Mother Nature has not been cooperating with my goals as far as running goes. Last week it was brutally cold out and it brought my routine to a screeching halt. I don’t mind running in the cold at all, however when you team -16 wind chills up with icy roads, it raises the risk of falling and breaking something. That doesn’t sound like fun to me and would end up halting my goals even further!

As a result of moody Mother Nature, I’ve been lifting weights, doing yoga and tossing in some of the Quick Workouts I have post here in the past.

I really wish I liked the treadmill, I’ve just never felt comfortable on one and as a result, gave ours away a few years back. I was supposed to head out and hit the pavement today, but the snow started sooner than I hoped and the roads became slick very quickly. Hopefully tomorrow I can squeak a few miles in since I’m at a total of zero miles for this week. Sigh…

What do you do when Mother Nature rears her bitchy head? Do you push through anyway or hit the treadmill instead? Any tips on learning to love the treadmill?

It’s Official…I’ve Lost My Mind

lost mindI decided this year would be the year I find the fun in fitness again. As I have mentioned before, I decided on a few “fun runs” to do in the summer, and I’m absolutely stoked about them.

Yesterday, I opened up Groupon as I normally do, hoping to find a deal on something I can use. What did I see? A Groupon for the Rugged Maniac 5k in July. What happened next? The wheels in my head started spinning, insanity took over and I purchased two Groupons for the event!

In case you don’t know what the Rugged Maniac is, here’s a little video to shed some light on this:

Of course I watched the video AFTER talking my husband into it, purchasing the Groupons AND registering for it. I knew it was a mud run. I knew it had lots of obstacles. My inner athlete swears I can do this, my inner wimp is currently cowering in the corner. (My inner wimp can be pretty dramatic at times.)

I plan on using the The Rugged Regimen which is the training guide provided by the Rugged Maniac website to prepare.

Overall, I think this is going to be a tremendous experience for me. I’ll be leaving my comfort zone, training in ways I haven’t trained in a long time and spending time with some amazingly fun people! What more could I ask for?!

{Update} 26 Miles For 26 Victims

Last week I blogged about signing up for the 26 Miles For 26 Victims event that #FurtherFasterForever was running over on their site. When I decided to do this, I knew it was a lofty goal, but I knew I was capable of doing it.

This was not an easy to do, especially for a newbie to running like me. My legs were sore, my knees started to hate me and I ended up doing quite a bit of speed walking during some of these miles, but I did it and that’s what counts!

I am over the moon happy with this accomplishment, but the cause I did it for is such a somber one. Each one of those miles I ran represented a child or teacher that was taken from their loved ones too soon. A person who set out about their day like we all do, everyday. A child who was excitedly waiting for Santa to arrive and teachers who were planning their shopping and holiday festivities with loved ones, but never got to see those anticipated moments.

Each mile made me appreciate all that I have, especially the two miles that we did as a family. It might not be much, but it is mine and I will treasure it for as long as I am blessed enough to have it.

Healthy Apps – Part 2

Not too long ago, I did a Fitness Friday post featuring different fitness apps (which you can find here….hint hint) that I had grown to rely on during my fitness journey, as well as some new ones I had just downloaded and decided to try out.

A few of those new apps I have since deleted, while a few others, like Nexercise, have made the cut and I’m now quite fond of. Despite the fact you have to have your phone on you ever when lifting weights to get full credit for the workout….I find that part a bit lame.

Anyway…I’m sure the fact that I was on Pinterest and stumbled upon an interesting infographic will not surprise any of you. So try to contain your laughter and eye rolling and check it out:

{Update} 9 Months Post-Op

revisionIt’s hard to believe it’s already been 9 months since my surgery….time really flies as you’re trying to build up core strength again.

At today’s post-op visit, the surgeon said every looks great. My scar is finally starting to fade (although it still turns an awful purple color when I workout really hard), and he said that feeling will continue to return around my belly button as time goes on and that I’ll still see results until the 1 year mark.

Over the past few months, I have been very happy with my results from the procedure, however, the ends of my scar line have always bothered me. There is a slight puckering (mainly on the left side) that I am not thrilled with. The puckering is a result of where the drains were and are very common with tummy tucks. The surgeon said it is an easy fix, so I’ll be having a revision done in the next few weeks.

I’m not nervous about this at all. The procedure will only take about 45 minutes and is done in the office, with a little bit of local anesthesia. I can drive myself to and from the appointment and only need to take it easy for about 24 hours after it’s done. The other plus is that they use dissolvable stitches, so that’ll mean the post-op visit will just be to check my healing.

I apologize for the lack of updates on my post-op journey. After the initial few weeks, it was life as usual and I honestly didn’t think about it much. I definitely feel more comfortable in my own skin now. It’s nice to be able to look into the mirror and see the results of all the hard work I’ve done over the past 3 years.
